Update dependencies and rerun notebooks (#114)

Note that this bumps jupyterlab to 4.0.1, and major version 4 of
jupyterlab no longer includes real-time collaboration, which would
need to be installed via the now-separate package
jupyter-collaboration. As of this writing, that package is on PyPI
but not yet on conda-forge, and it has pre-release status on PyPI.
