Update doc_id URLs for inference APIs

This PR updates the URLs that are used for the inference APIs to use the appropriate pages under https://www.elastic.co/docs/api/doc/elasticsearch/group/endpoint-inference

It also fixes an incorrect summary title for the Elasticsearch inference API.
