fix: FirebaseOptions: move default initialization from Builder

Use provided by Builder objects prior to init defaults.
Avoid ClassNotFoundException when JacksonFactory excluded

                FirebaseOptions.builder()
                    .setJsonFactory(Utils.getDefaultJsonFactory())
                    .build()

        <artifactId>firebase-admin</artifactId>
