After investigating the failing FLE JRuby tests, I found that they were passing when I ran them in an evergreen patch. This PR simply uncomments those formerly-failing JRuby tests. After inspecting their run, they are part of the set of failing tests, but they are failing because of the server change in how wildcard indexes are reported (see https://jira.mongodb.org/browse/RUBY-3216). The FLE tests themselves, for JRuby, appear to be passing.
