Blocked on: #1663
@qian-hu discovered a bug in #1447, which is fixed in that PR, but I tried adding a test that would catch the same bug, and it failed because of Nix packaging issues.
So here we update the Nix packages and add the test that the Nix installed version works with Foundry.
